This bowl is the perfect quick and healthy dinner or lunch that you can easily prepare during a busy week. The ingredients are simple and can be conveniently stored for meal-prepping. Any left-over makes a delicious lunch in the office or at school!
Serving: 2 bowls
Ingredients:
1 cup sushi rice/black rice/quinoa
200 gr basic tempeh
1 avocado
1 mango
1/2 cucumber

Dressing
1 TS Miso paste
1 TBS Sesame Oil
1 TBS Rice Vinegar
1 TS Honey
Black sesame seeds
Optional
Nori paper
Instructions
Prepare rice or quinoa, let it cool down and fill half of the bowls. Prepare basic tempeh and add on top of the rice. Slice or dice all vegetables and add as toppings in bowl. For the dressig, whip together ingredients with a spoon and drizzle over bowl. If you would like to replace the honey with a vegan substitute, feel free to use either 1 TS agave syrup or 1 TS coconut flower sugar instead. If you like nori, you can add it as an extra flavorful topping to the bowl.
