This is my favourite summer salad bowl for a quick and refreshing dinner after school. It includes cranberries, avocados and tofu which are complemented by the refreshing taste of the lime slices!
Serving: 2 bowls
Ingredients:
1 cup sushi rice/black rice/quinoa
200 gr tofu
200 gr cherry tomatos
200 gr lettuce
1/2 avocado
1/2 lime

Dressing
1/2 lime (juiced)
4 cilantro stalks
1 /2 TBS black sesame seeds
1 TBS miso paste
1/2 TBS honey
Optional
1 TBS dried cranberries
Instructions
Prepare rice or quinoa, let it cool down and fill half of the bowls. Prepare tofu and add on top of the rice. Slice or dice all vegetables and add as toppings in bowl. Mix all dressing ingredients in separate bowl and pur over salad bowl as a final step. If you like dried cranberries, you can add it as an extra flavorful topping to the bowl.
